Thought of the Day #56
gnocchi soup, and then adjusted it. It originally had less veggies and
a boatload of cream.
So, here goes...the formatting may be off 'cuz I'm emailing this from my
phone. I'll adjust it when I'm back on the computer.
Chicken & Gnocchi Soup
3 chicken breasts, cooked and cubed
4 cups chicken stock
2 stalks of celery, diced
3 garlic cloves, pressed or chopped
1 carrot, shredded
1/2 onion, diced
1 tblsp olive oil
1/2 tsp dried thyme
1/2 tsp pepper
16 oz pkg gnocchi
1 cup sour cream
1 cup milk
1/2 cup grated Parmesan cheese (not the stuff in the green can!)
1 tblsp cornstarch
salt to taste
*Saute onion, garlic, carrot and celery in oil until onions are
translucent.
*Add chicken, broth, thyme, milk, sour cream, pepper. Heat to boiling.
Add gnocchi and cheese. Boil for four minutes, reduce heat, simmer for 10 minutes.
*Mix cornstarch with a couple of tablespoons of water. Add to soup. Cook
until thickened.
*Serve. Serves 6+.
It's easy and sooo yummy. Enjoy!

Thought of the Day #52
sincerely want to "forgive and forget"? Do we want to only remember the
good in hopes that our own personal histories will be similarly
cleansed? Are we simply lying to loved ones for fear they might be hurt
to hear the negative? Are we just "playing nice 'cuz every death reminds
us of our own mortality?
A local celebrity died yesterday, and despite stating that the
individual was "controversial", there was nothing negative covered. One
might think that ths person had suddenly grown a halo upon his demise
and flew far from the controversy. He was cleansed of his "sins" in the
public spotlight and has been chosen to live in silver lined clouds.
Lucky him.
It's just a curious media behavior...as well as personal behavior, too.
It happens in families just as much as it does in the media. As my good
grandma used to say, "We don't talk ill of the dead."
But why? Why can't we say bad things if they're true??

Thought of the Day #50
the "octomom"'s 14 kids, I wonder how healthy it is for a society to
put their nose into another's reproductive activity. Why do we have
strong opinions about such things? Shouldn't we focus solely upon our
family? In the case of overcrowding in China, is it OK for governmental
agencies to intervene? Why do we question the mental health of the
"octomom", but not that of a Catholic family with 20 kids? Why do we
selectively judge each other so harshly, yet given a similar situation
we would not want to be judged? Just throwing out questions...

Thought of the Day #42
a "travel ready" set of clothes seems so doable and relatively easy to
assemble. If I put together a set of low wrinkle clothes that could fit
into most travel situations, a set of undies, bras, hosiery and basic
toiletries all in my suitcase, I would be free to pickup and go without
nary a second thought. Make it a full week of outfits, and *voila*, low
stress departures for most trips. The time savings would be awesome. Of
course the trick would be putting it back together after coming home, so
that the next trip would be just as easy. Me likey the idea!

dark items? So many small things glow with batteries now, that it just
seems so commonplace to experience a softened glow in your hand. I
remember "powering" a little ghost finger puppet under a lamp and
spending hours marveling at its luminocity in the dark. I remember
thinking I had *the* coolest socks in school 'cuz I had GID socks. So
much fun, so few batteries. I'm writing this in the dark, and I have
the glow of my phone's screen in front of me, but it's not the same...I
want that awe back!

government throw money at a sick situation will only make it sicker in
the long run.
Ideally, I believe that we need to move away from a market economy, too.
(It's the commie in me!) Stocks shouldn't be used as a gambling vehicle
where it can make people rich on speculation success, but rather should
be looked at as long-term company "ownership" with only the potential of
modest profits. Maybe stocks could only be sold after holding for a
minimum of 6 months or a year?
.... Eh, I could be soooo wrong.

them to a co-worker who is a similar size who is financially strapped.
She sincerely appreciates the castoffs and often wears them to work
soon after receiving them. Sometimes Ivan reports back saying, "She
wore that aqua shirt today." or something similar. I'm always happy
that she found something she liked in the bag. You never really know
since everyone's tastes are so different.
Well, Ivan told me yesterday she was wearing a thermal pajama set to the
office. Honest!! He obviously recognized it, and had to do a double
take. I feel really bad about it, but what can you do? You don't want
to say anything that might embarrass her, but at the same time I feel
like I need to somehow "define" what's appropriate to wear where if she
get's more hand-me-downs. Or maybe I'm just overreacting? I dunno. Any
ideas?

gone from stapled pamphlet to a large gum bound book. It's flippin'
ridiculous. It's time...past time... to have a flat tax rate. No
deductions for anything aside from additional people in the family. No
deduction for McMansion mortgages, donations to charity, etc. As it
stands now, there is no fairness in taxing. If you choose to donate
money, you should do so out of the goodness of your heart and not to
get a deduction. And getting money back for being in debt for your
house? Clearly that was designed to stimulate home ownership, but we've
got to STOP the insanity. Financially benefitting from being in debt is
flippin' wrong. There are soooo many other deductions that are less
common, but equally ridiculous.
With a flat tax we could cut the number of IRS members, cut down on the
tax forms which will probably save a small forest every year, it will
bring fairness back to taxation, and it will save everyone stress
during the "tax season."

Thought of the Day #33
blend in to society. It's really much like being a celebrity. I can
walk in a park and others will stop, point and remark something to
their companion. It happens in restaurants, grocery stores, theaters,
etc. If you've got a crowd, I've got their attention. At times, I think
I should sell advertising on my body 'cuz get more second glances than
any billboard. Oh, and the word of mouth...instantaneous.
